OilOver the past 20 years not much has changed with oil production. Only the time of the harvest has been shortened. Now we tend to harvest in November. 20 Years ago we harvested the olives mainly by hand using a wooden ladders and pieces of cloth made by the women who worked the fields. At that time there were no aluminum ladders nor the technique of spreading out large pieces of cloth under the trees. The harvest usually began after Christmas so that the olive were completely mature. The harvest went on until the beginning of March. Extra virgin olive oil - D.O.P.
